Riyadh: The Hail Region Municipality pavilion at the Saudi National Products Exhibition (SNP Expo 2), currently held in Kuwait, captivated visitors with its showcase of Hail cuisine. Attendees expressed their admiration for the popular winter dishes that define the Hail region.
According to Saudi Press Agency, among the highlights was "Hail Kibbeibh," a dish made from a blend of lamb meat, rice, onions, lemon, and Hail red pepper. Visitors also enjoyed "Maqshush," which consists of small loaves of wheat flour baked in ovens and topped with ghee, honey, sugar, or molasses. This dish is especially popular during the winter season, alongside "Hanini" and "Raghfan," which are also known in the northern regions.
The "Maqshush" meal has gained recognition as a dish throughout many cities in the Kingdom. It was recently designated as a national dessert after the Culinary Arts Commission announced its inclusion in the "National and Regional Dishes Narratives" initiative launched in 2023. As part of this initiative, "Maqshush" was named the national dessert, while "Hail Kibbeibh" received recognition as a regional dish representative of the Hail region.
